PECAN PIE MUFFINS

These are wonderful in our Canadian cold weather! My husband, Jim, takes a muffin to work every day, and his co-workers come in and say, "What kind do you have today?"

 

1 cup light brown sugar

1/2 cup flour

1 cup chopped pecans

2/3 cup softened butter

2 beaten eggs

1/2 tsp. vanilla

 

Stir together first 3 ingredients. In a separate bowl, beat the butter, eggs and vanilla together until smooth, stir into the dry ingredients just until combined. Spoon batter into medium-size muffin cups with papers. Fill about 2/3 full. Bake at 350 degrees F. for 20 minutes
