HERBED BEEF PATTIES

I have a great recipe for herbed beef patties.

You need:

About 2 cups (or more if you like) grated mozzarella cheese

Parmesan cheese (optional)

Fresh herbs

Canned (or homemade) spaghetti sauce (2 cans)

For the patties you need:

1 lb of extra lean ground beef.

1/4 tsp red pepper flakes

1/4 tsp black pepper

1/2 tsp oregano

1/2 tsp basil

Pinch of thyme

1/2 tblsp your favourite flavour of wine vinegar (I usually use tarragon

flavoured)

Mix together thoroughly. Form into patties, coat each patty with flour

and let sit for about 5 or 6 minutes.

Preheat oven to 350 degrees.

In a small bowl, beat together 3 eggs. In another bowl, have some

breadcrumbs. Dip each patty into the egg mixture, then into the

breadcrumbs, coating thoroughly.

Heat 1 tablsp of olive oil in a skillet, put each patty in the skillet

until slightly browned on both sides, then put in baking dish.

Place each patty in the baking dish, slightly overlapping each other.

Pour canned (or homemade) spaghetti sauce over all the patties, then

cover with 1/2 of mozzarella cheese.

Bake for about 25 - 35 minutes, adding the rest of the cheese halfway

through.
