Apple Fritters

A super easy, quick and FUN breakfast treat!

 

2 cups flour

3 tsp. baking powder

1 tsp. salt

4 Tbsp. sugar

2 beaten eggs

1 cup (plus 2 Tbsp.) milk

3 cups apples, peeled, cored and diced

1-2 Tbsp. (optional) cinnamon to taste

Powdered sugar + brown paper bag

Sift dry ingredients then add milk and eggs. Stir batter until smooth. Add diced apples to batter and mix well. Drop by heaping-tablespoonfuls in (1/2-1") medium hot oil (use a heavy skillet). Fry until golden brown on both sides (should take 2-3 minutes total per fritter, depending on size of fritters).

Drain fritters on paper towel. Let the fritters cool slightly. Put cooled fritters in paper bag with powered sugar and shake. Serve to the anxious crowd!

Makes about 30 fritters, more or less depending on sizes of your fritters.
