QUICK AND EASY CHILI

Sister Rikke Clements

Houston Ecclesia, Texas

1 lb. Lean hamburger meat

Spices:

chili powder

OR

a packaged chili seasoning such as McCormick's which has different "spicy" levels (mild, hot, etc.)

OR

your favorite picante sauce (we use Pace, of course!)

Beans:

2 cans Ranch Style Beans

1 can pinto beans

1 can kidney beans

I substitute 4 cans Ranch Style brand beans for all the beans. However this brand is only available in the south so other areas will have to choose another brand of beans. We here in Texas have been known to mail cans of Ranch Style beans to sisters in other parts of the country who don't have access to them.

1 can Hunt's Choice-Cut diced tomatoes

1 small can (6 oz.) tomato paste

Optional - 1 small onion, chopped.

Brown hamburger (with onion if desired), drain. Add the spices you desire and cook a little longer. Now add beans, tomatoes and tomato paste. You may need to add a little water. Bring to a boil, lower heat and simmer at least 30 minutes.

I serve this chili over rice.
